Homemade Top-Quality Mirabelle Cherry Jam
You will find all the pleasure of the whole fruit in our Cherry jam to accompany, in particular, good local cheese... The Cherry jam will go perfectly with a Crottin de Chavignol, a Pouligny St Pierre (Goat PDO du Berry) or a sheep cheese of Pyrenean flavour.
An idea of recipe – Cherry Jam Cheese Cake
Ingredients for 6 persons:
For the base of the cake: 200g of shortbread biscuits / 80 g of melted butter / 2 tsp. brown sugar / a baking ring / greaseproof paper
For the cheese preparation:
1 organic lime / 400 g of Philadelphia cheese / 50 g of whipping cream / 2 fresh eggs / 1 tsp. of corn flour / 50 g sugar
For the garnish: 250 g cherry jam / icing sugar
Preheat the oven to 160 ° C (th. 5-6).
Mix the shortbread biscuits with the butter in pieces and the sugar. Divide the dough at the bottom of a baking circle lined with greaseproof paper. Level the surface, cover and keep cool.
Grate the lemon zest and squeeze the juice. Mix the cheese with the cream, zest and lemon juice until you get a homogeneous texture. Add the whipped eggs, corn flour and sugar.
Mix and pour the preparation on the cookie base. Bake 40 min at the same temperature.
Let cool and place at least 3 hours in the fridge.
Gently unmold the cheese cake on the serving platter.
Spread the cherry jam on the surface of the cheese cake. Sprinkle a veil of icing sugar before serving.
Tip +: Sprinkle the cake with crushed pistachios or dark chocolate shavings to add some crunch.
