What is the rose-hip?

The rose-hip is the fruit from the rose-hip tree, also called the wild rose berry. It comes from the thorny rose tree with pink or white flowers.
It can also be called “wild rose” or “scratcher” (this last point was also made by the Amerindians, who stated that those who ate it were afflicted with painful itching on the bum…

If you go for a walk in the countryside, along the roads, in the undergrowth, from the end of August to mid-November, you will maybe find rose hip bushes which, in this season, have many small red berries filled with small hairy stinging seeds.

Children used to use these fruits as "scratching hair". This fruit contains twenty times more vitamin C than a citrus fruit!
A good idea to have some before the arrival of the cold season. (The English and the Scandinavians who were deprived of citrus fruits during the second war would have found in the jam of rosehip berries an effective substitute for vitamin C).

To make rose hip jam, it is necessary to separate the flesh and hairy seeds of the berries in order to recover the pulp of the fruit. 

An idea of recipe : 

ROSE HIP JAM YOGURT

Ingredients :

1 natural yogurt,
1 l of skimmed milk,
1 jar of Cassandrine Homemade rose hip jam 

PREPARATION

Boil the skimmed milk.
Put the natural yogurt in a salad bowl.•
Add 2 ladles of milk and mix well.•
Gradually add the remaining milk.•
Then, put jam at the bottom of your yoghurt pots, and fill each jar with the preparation.•
Put in the yogurt maker and cycle for 15 hours with a towel on.•
Once the cycle is complete, put in the refrigerator overnight at least.
